Overnight Steel Cut Oats

A lot of these oatmeal bowls I see posted on Instagram look amazing... I didn't know you could remix oatmeal like that, so I wanted to get involved. However, I am a procrastinator and don't want to spend time in the morning mixing, microwaving, waiting to cool, and eating. Then I heard of overnight steel cut oats! You don't have to cook anything. Just take 10 minutes to mix it all together on a Sunday, and have breakfast ready for you ever day of the week.

Makes: 5 servings

Overnight Steel Cut Oats

Ingredients:
  • 2 cups Steel Cut Oats
  • 2 Tbsp Flaxseed Meal
  • 2 Tbsp Chia Seeds
  • 1 pinch of Salt
  • 2 cups plant based milk
  • 1 Tbsp agave or Maple Syrup
  • 1/4 tsp vanilla extract (optional)

Instructions:
  1. Mix all ingredients and let it sit, covered, overnight in the fridge. I used a 3 Cup sized Mason Jar.
  2. In the morning top the oats with additional milk if necessary, nut butter, sliced almonds, fresh fruit or dried fruits, applesauce, strawberry puree... really, whatever you want.
