Chocolate Chip Vegan Pancakes

What do you miss mostly now that you are vegan? The answer should be "absolutely nothing", as I've seen better versions of all my old time favorites in vegan fashion. Pancakes will always be a breakfast classic. However, until diners start making these, you can make them for cheap at home.

Chocolate Chip Vegan Pancakes

  • Chocolate Chips - the amount is up to you
  • 3 Cups of Flour
  • 1/4 Cup Sugar
  • 3 Tbsp Baking Powder
  • 1/4 tsp Salt
  • 3 Cups Almond Milk
  • 1 tsp Vinegar
  • 1/4 Cup Oil
  • 2 tsp Vanilla
  • 1 tsp Cinnamon (Optional)
  • 1/2 tsp Almond Extract (Optional)
  • Chopped nuts (I use pecans)

  1. Combine almond milk and vinegar.
  2. In a separate bowl combine flour, sugar, baking powder, salt and cinnamon.
  3. Add the oil, vanilla, and almond extract to the almond milk and vinegar mixture.
  4. Now mix the wet and dry ingredients together until combined. Try not to over mix the batter it may be slightly lumpy.
  5. Stir in the chocolate chips and nuts.
  6. Pour the batter on lightly greased heated griddle or pan. Flip them when they are LIGHT brown. It should only take a couple minutes each side.
