Quick and Easy Guacamole

I like my guacamole simple and I make it this way every time. It can be served as is or you can jazz it up with chopped onions, tomatoes, jalapenos, cilantro or whatever else your little heart desires. It's best if you use the guacamole right away, but if you need to store it for later, squeeze a little bit of lemon on top and smooth with the back of spoon. Now take saran wrap and press it on top of the guacamole, removing as much air as possible. Store in the fridge for up to 24 hours. If the top ends up with areas that turn brown just scrape the top layer off and discard. The rest will be bright green and perfectly fine to use.

  • 2 small or 1 large ripe avocado
  • 2 tsp fresh lemon juice
  • 1/4 rounded tsp salt
  • 1/2 tsp garlic powder

  1. Cut the avocado in half and remove the pit. Use a spoon to scoop the flesh out and put it in a bowl.
  2. Add the lemon juice, salt and garlic powder and use a fork or potato masher and mash until smooth.
