Maple Granola with Cranberries and Walnuts

Store bought granola can get expensive, so make your own fancy pants granola at home! It's easy and delicious! Try adding your own mix of dried fruit and nuts!

Maple Granola with Cranberries and Walnuts

Ingredients:
  • 3 1/4 cup rolled oats
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup maple syrup
  • 1/3 cup oil
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/2 cup raw walnut pieces
  • 1/4 cup dried cranberries

Instructions:
  1. Preheat oven to 275°.
  2. Combine the oats, cinnamon, and walnuts in a large bowl.
  3. In a separate bowl combine the maple syrup, oil, vanilla extract, almond extract, and salt.
  4. Pour the maple syrup mixture over the oat mixture and mix until everything is coated.
  5. Line a cookie sheet with parchment paper and evenly spread out the granola mixture.
  6. Put it into the pre-heated oven and bake for 45 to 50 minutes. Stir every 10 minutes. As you get to the end of the cook time check often to avoid burning. Once your granola is toasted and feels crisp it's done. Don't worry if it isn't completely crunchy yet, as it cools it will get more crisp.
  7. Pull the granola out of the oven and stir in the cranberries. Let it cool completely on the cookie sheet. Once it cools store in an airtight container.
