Easy Vegan Brownies

She made The Easiest Vegan Brownies by Chloe Fairchild from scratch, and it was by far the most successful that we have ever been at making brownies without using a box.

Vegan Brownies

  • 1/4 cup canola oil, 60 mL
  • 1/4 cup soy milk, 60 mL
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour, 120g
  • 1 cup granulated sugar, 200g
  • 1/4 cup cocoa powder, 20g
  • 1 tablespoon corn starch
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon iodized salt

  1. Preheat oven to 350°F/177°C for conventional oven, adjust accordingly for convection.
  2. Combine dry ingredients in large mixing bowl. Combine wet ingredients in glass mixing cup, pouring wet slowly into dry while mixing continuously with rubber spatula until just combined. Mixture will be thick, like cookie dough.
  3. Spread into 9×9 pan lined with parchment paper and bake for 30-35 minutes until a toothpick comes out just clean. Avoid overbaking.
  4. Let cool 5 minutes in the pan, remove carefully, let cool additional 10 minutes on a cooling rack. Cut into 9 squares with a large knife. Let cool fully before storing in airtight container but can be enjoyed warm. If you wish to cut them smaller, cut into 9 squares and then cut each square into two triangles for nicest presentation.
